This Gulf species is sustainable with healthy stocks in the sea. It has a finely textured flesh and a sweet yet delicate flavour. They are best consumed by steaming, baking or barbequing.
Cooking Tip: If you take the fish whole we recommend wrapping it in foil with fennel, red onion, white wine and lemon and cooking in the oven.
